Butter chicken or Murgh makhani is an Indian dish and popular in countries all over the world. The origins of butter chicken can be traced back to Delhi, during the period of Mughal Empire. According to a documentary by the Discovery Channel, butter chicken recipe was invented by a person working in the kitchen staff of a famous restaurant called Moti Mahal located in Daryaganj, the central region of Delhi. While the dish's general recipe is well known, the actual flavor can vary from restaurant to restaurant even within India. Butter chicken is usually served with naan, roti, parathas or steamed rice. This Indian chicken dish is also quite popular in Pakistan, which in return also has popular food that is thoroughly enjoyed in India especially "Lahori food" (food from Lahore).
Preparation
Preperation is started by marinating a chicken overnight in a yoghurt and spice mixture usually including garam masala, ginger, lemon or lime,pepper, coriander, cumin, turmeric, chilli, methi and especially garlic. It is in some ways similar to chicken tikka masala.The chicken is then grilled or roasted.
Makhani sauce is made from butter, tomatoes, almonds and various spices, often including cumin, cloves, cinnamon, coriander, pepper,fenugreek and sometimes cream. Once the sauce is prepared, the marinated and grilled chicken is chopped and added to it.
